Grilled Peach Chipotle Pork Chops On The Weber

These Peach Chipotle Pork Chops are thick-cut, juicy, and loaded with bold flavor from a sweet and smoky glaze. Perfectly grilled over a two-zone fire, they’re finished with a creamy cilantro lime crema for the ultimate bite.
Ingredients
- 2-inch thick porterhouse-style pork chops (2–4 chops)
- Heath Riles BBQ Peach Rub
- BBQ Bob's Chipotle Garlic Butter Rub
- BBQ Bob's Peaches & Brown Sugar BBQ Sauce
- 1 chipotle pepper in adobo sauce
- 1–2 tablespoons adobo sauce (from the can)
- Splash of water (to thin the glaze)
- Cilantro lime crema (optional, for topping)
- Fresh cilantro (optional, for garnish)
Directions
- Start with 2-inch thick porterhouse-style pork chops and pat them dry with a paper towel.
- Season each chop generously with BBQ Bob’s Chipotle Garlic Butter Rub, making sure to coat all sides.
- Follow with a layer of Heath Riles BBQ Peach Rub, pressing it into the meat and rolling the edges to ensure even coverage.
- Fire up a Weber Kettle Grill and set up a two-zone fire using hot charcoal on one side and a cool zone on the other.
- Place the pork chops over direct heat and sear each side for 1½ to 2 minutes until they develop a golden crust.
- Move the chops to the cool zone and continue cooking until they reach an internal temperature of 138ºF.
- While the chops cook, make the glaze by blending 1 bottle of BBQ Bob’s Peaches & Brown Sugar BBQ Sauce, 1 chipotle pepper in adobo, 1–2 tablespoons adobo sauce, and a splash of water until smooth.
- Once the chops hit the target temp, brush them with the chipotle peach glaze and let the sauce set by closing the grill lid over the meat for a few minutes.
- Remove the chops from the grill at 145ºF, let them rest for 5 minutes, then serve with a drizzle of cilantro lime crema and a sprinkle of fresh cilantro.
