- Lemon
- Heath Riles BBQ Honey Chipotle Rub
- Thyme
- Honey Butter Glaze
- ¼ cup of unsalted butter
- ½ tsp of Heath Riles BBQ Honey Rub
- ¼ cup of Mike’s Hot Honey
Directions
- Stoke your pizza oven of choice with wood and Royal Oak Charcoal Tumbleweed Fire Starters. Fire it up to 650℉, moving the fire to the grate of the oven.
- While the oven heats, prep the salmon by cutting meat off the tail and belly area. Your salmon filet should resemble a smooth slab of ribs that’s even on the sides.
- Transfer the salmon to a cast iron skillet and drizzle sriracha over the top.
- Season the fish with Heath Riles BBQ Honey Chipotle Rub and lay lemon slices over the top.
- Prep the glaze by placing the butter, Heath Riles BBQ Honey Chipotle Rub, and honey in a cast-iron pot.
- Put the salmon in the pizza oven, lining it up with the grate.
- About 7 minutes into the cook, put the glaze in the oven to melt.
- Let the fish cook for 10 minutes, then baste with glaze. Place back in the oven to cook for another 5 minutes before removing from the grill. The fish has a total cook time of 15 minutes.
- Remove the fish from the oven and garnish with fresh thyme if desired.
